Fried zuchini, crispy and delicious!
Who can resist? Here is our secret recipe for fried zucchini, deliciously well-fried. And when we say well-fried, we mean to crispy and with just the right amount of olive oil!
Ingredients:
1-2 relatively large zucchini (about 1 lb)
Approximately 1 cup all-purpose flour
½ teaspoon baking powder
2 cups water with 1 teaspoon salt
½ teaspoon salt for the zucchinis
Olive oil for frying
Directions:
We cut the zucchini into round slices or long strips, about 1/4-1/5 in thick. We sprinkle them with the 1/2 teaspoon of salt and let them rest In a plate, we mix the flour with the baking powder. In a deep bowl, we put the water and dissolve the 1 teaspoon of salt.
We add enough olive oil to a pot or deep pan and let it heat up. We take several zucchini slices, dip them first in the saltwater and after shaking off the excess water (I scoop them out with a slotted spoon), we dip them in the flour and coat them well.
We take one flour-coated slice at a time, dip it quickly again in the saltwater and drop it into the pot-fryer or pan. We turn them over and let them turn golden brown on all sides.
Serve with grated gruyere cheese over the hot zucchini or squeeze some lemon juice! You are in for a treat!
